L’Envolée is concocted from a special blend of aperitif cider to which we add juice from pears harvested in the Pedneault family orchard. The cultivars used in this recipe are Beauté Flamande and Clap Favorite. These pear varieties give a very sweet juice. This aperitif cider is amongst those preferred by women. Cerisier rose et pommier blanc
The cherry juice is extracted from Montmorency and Evans sweet cherries, the Evans being even sweeter that the Montmorency. These varieties grow well on Isle-aux-Coudres thanks to a microclimate and produce a red fruit, with a slightly acid and tart taste becoming sweeter at maturity. It’s light red colour and cherry-flavoured taste will impress your guests.
